Salmon with Crispy Potato Cake, Pesto Sauce

Salmon
fillets
Salt and pepper to taste
Oil for cooking
Salt and
pepper salmon fillets. Place in pan over med-high heat and cook
to brown one side. Turn over and reduce heat to medium. Cook until
salmon is done.

Potato Cakes
Russet
potatoes
Salt and pepper
Oil for frying
Shred
desired amount of potatoes into a bowl. Sprinkle with salt and
pepper. Mix to combine. Form into cakes (patties), squeezing out
extra liquid if necessary. Heat a thin layer of oil in saute pan
over med-high heat and cook cakes until crispy and cooked through,
turning as needed.
Pesto
Sauce
3
c fresh basil leaves
2 med garlic cloves
2 Tbsp pine nuts, lightly toasted
4 Tbsp fresh grated Parmesan cheese
1 c olive oil
Salt and pepper to taste
Put basil,
garlic, pine nuts and cheese in blender. Pulse a couple of times,
then stream in olive oil while blending on med-low speed. Salt
and pepper to taste.
