Garlic and Fresh Herb Fish Fritters
Recipe for making garlic and herb fish fritters.
Ingredients
1 lb. lean fish, cooked, cooled, and flaked3 large eggs, separated3 tablespoons all purpose flour1/2 teaspoon salt1/4 teaspoon pepper1 clove garlic, smashed to a paste with a chef's knife1 tablespoon chopped fresh parsley2 teaspoons finely snipped chives Oil for deep fat frying
Instructions
Heat oil for frying to 375 degrees.Whisk the yolks until well beaten and lightened.Add in the flour, salt, pepper, smashed garlic, parsley, and chives.Stir in the flaked fish, and mix until combined.Beat the egg whites until stiff peaks form. Fold the whites into the fish mixture.Drop by spoonfuls into the hot oil in an even layer, and fry until golden. Fry until golden brown, then remove the fish fritters with a slotted spoon or a fryer basket if using. Transfer the fillets to drain on absorbent paper toweling. Repeat with remaining fish. Serve immediately.
