Plain Fritter Batter for Seafood Using Whipped Egg Whites

Plain Fritter Batter for Seafood with Beaten Egg Whites
Basic technique for using a whipped egg white batter for frying fish.
Ingredients
2 large eggs, separated Salt Pepper1/2 cup milk1 tablespoon melted whole butter, cooled to room temperature2 teaspoons baking powder1 cup all purpose flour
Instructions
Place the yolks in a mixing bowl, and add in some salt and pepper, the melted butter, and about half of the milk. Mix the flour and baking powder together, then whisk into the egg yolk and milk mixture. Slowly add in remaining amount of milk.Stir the flour, baking powder, salt, marjoram, savory, oregano, and pepper together.Beat the egg whites until stiff peaks form, then fold into the egg yolk batter.Use immediately.
