Crab
and Mashed Potato Cakes
1 lb.
crabmeat, picked to remove all shell
1 c mashed potatoes, cooled, leftovers are fine
1 egg, beaten
1/2 tsp salt
Black pepper, as needed
Onion salt, as needed
Oil for frying
Combine all ingredients in a mixing bowl, with enough seasonings
as needed for taste. Shape into 12 cakes. Fry until browned on
both sides. Serve.
