Classic Pan Fried Soft Shell Crab

Basic Fried Soft Shell Crab

4 medium soft shell crabs, cleaned and patted dry
Seasoned Flour for dredging
Butter for frying

Preheat a large, heavy bottom frying pan over medium to medium-high heat for about 3 minutes. Add butter in the pan for frying, about 3 to 4 Tbsp. While the butter is melting, dredge the crabs in flour and shake to remove excess. Add the crabs, top sides down. Cook for about 4 to 5 minutes until well browned (crabs will turn a reddish-color) and turn over. Cook until the second side is browned, and crabs are cooked through, another 5 to 6 minutes. Remove and drain. Serve hot.

Classic Pan Fried Soft Shell Crab

Plate-Up Instructions:
         Prepare Marinara Sauce; reserve and keep warmed. Prepare and fry calamari. Place desired amount of sauce on the bottom of a soup or pasta bowl. Top with desired amount of fried calamari. Squeeze a wedge or two of lemon over all. Sprinkle dish with chopped fresh parsley and basil and fresh grated parmesan cheese.
