Classic Fried Calamari

Fried Calamari
Giant
Squid or Calamari Steak, cleaned and cut
Dredging for Calamari:
Cornstarch and flour mixed together:
1/2 part cornstarch to 1 part flour
Egg Wash
Flour with salt and pepper
Dust the squid or calamari pieces in cornstarch-flour mixture.
Thoroughly shake off excess. In batches, dip in egg wash, then
seasoned flour. Drop in heated oil and fry until golden brown
and done. Remove with a slotted spoon and transfer to towelling
to dry and remove excess oil. Repeat with remaining calamari.
