How to Skin a Whole Flat Fish

1. Lay fish on a large, flat clean surface with the dark side up.
2. With a sharp knife, make a cut below the tail and loosen both sides.
3. Firmly grasp the tail (with a towel you can get leverage) with one hand and pull away the skin. Repeat other side.
