How to Shuck Oysters
Preliminaries: Make sure all the oysters are alive. Clean under cold water and proceed.

  1. Hold a towel under the oyster in your hand with hinge toward the opposite hand (with hinge facing you).
  2. Insert oyster knife close to the hinge between shells and twist to break shell hinge.
  3. Being careful not to cut into oyster meat, slide knife around to shell and cut the abductor muscle, which joins the shell and oyster together.
  4. Lift off the top shell. Cut the lower end of oyster muscle from the bottom shell
    and carefully loosen.
