
How
to Shuck Oysters
Preliminaries:
Make sure all the oysters are alive. Clean under cold water and proceed.

- Hold
a towel under the oyster in your hand with hinge toward the opposite
hand (with hinge facing you).
- Insert
oyster knife close to the hinge
between shells and twist to break shell hinge.
- Being
careful not to cut into oyster meat,
slide knife around to shell and cut the abductor muscle, which joins
the shell
and oyster together.
- Lift
off the top shell. Cut the lower end of oyster muscle from the bottom
shell
and carefully loosen.
