With a thick glove or holding a thick towel to protect hands from the sea urchin spines, hold the sea urchin with the mouth side up. With kitchen scissors, cut around the mouth to remove shell top, and discard. Gently spoon away viscera, or gently shake and invert to empty viscera. The orange roe remains in the bottom of the shell and is ready for service. This roe is usually in a star shape.
