
How to Open and Remove
Roe From a Sea Urchin

- With
a thick glove or holding a thick towel to protect hands from the sea
urchin spines, hold the sea urchin with the mouth side up.
- With
kitchen scissors, cut around the mouth to remove shell top, and discard.
- Gently
spoon away viscera, or gently shake and invert to empty viscera.
- The
orange roe remains in the bottom of the shell and is ready for service.
This roe is usually in a star shape (see picture below as an example).
