How to Devein Crayfish:

With one hand, begin by pressing the body of the live crayfish down flat. With opposite hand, lift back flap or center bottom tail and twist gently to free the vein that is attached to this part.
Gently pull this freed part of the tail back to remove the intestinal vein.
