How to Clean Squid

Rinse the squid in cold water. Hold the tentacles firmly at the base and pull from the body while holding onto the body with the other hand. The body of the squid:
Peel the skin or membrane of the squid from the body. The fins are edible and can be taken off and used.
The pulled tentacles part of the body:
Lay flat and cut tentacles from the head. Reserve, the tentacles are edible. Find the hard mouth, the "beak," and discard. Discard the head and entrails.
Slip fingers in the body pouch, and find the quill. Pull this out, discard, and run body under cold water. Pouch can be cut into rings, strips, or left to be served as steaks.
