
How to Bone a Fresh
Herring

Boning a Fresh Herring: Preliminaries:
Begin with a pan
dressed herring—head and fins removed.
- On flat,
clean surface, place fish - flesh side down. With a thumb, press against backbone
to loosen up bones from flesh.
- Turn
fish with skin side down. Starting at the top of backbone, lift up
and gently remove it from the flesh.
- Inspect
flesh and remove any stray bones that are spotted.
