How to Bone a Fresh Herring
Preliminaries: Begin with a pan dressed herring—head and fins removed.

On flat, clean surface, place flesh side down. With thumb press against backbone to loosen up bones from flesh. Turn fish with skin side down. Starting at the top of backbone, lift up and gently remove from the flesh.
 
Inspect flesh and remove any stray bones that are spotted.
